Have you met any emotional onions lately? You know the kind; the ones that remind you of all the sad things that ever happened in your life and bring back those memories so intensely that you get kind of teary eyed. I met some last week and at a time when I needed to produce about 2 gallons of minced onions for a recipe.

I have read all kinds of solutions for curing tears or preventing tears. Some of them are a little crazy and some are totally off the wall. “1. Cut the onion under water” Say What? just how are you going to do that? cut them up in the bottom of the sink? 2 Cut the onion near running water or a cloud of steam (from a kettle or pan of water) Lets see now, move my cutting board over next to the stove and put on a pot of boiling water so that instead of teary eyes I get steamed glasses?

How about this one. Light a candle and set it near the cutting board before cutting the onion. (it will burn up the gases released by the onion) How romantic as I burn my elbow when I reach for my scraper to clear off my board.

Wear goggles or a mask… Right are we going swimming? Where is the respirator? I might as well get one of those as well. (By the way if you are going to shred horse-raddish I would recommend these)

Chill your onions in the freezer before slicing. For one onion this might work but how about 50 pounds? (Wiki-how says this is the most effective method) I’ve never tried this one but then again I wouldn’t have the time to run back and forth to the freezer.

The most ludicris of all is the “breath through your mouth routine”… which traps the gasses in your sinuses and guaruntees a sad time. Sorry folks the exact opposite is true.

The actual solution is to breathe through your nose only, and keep your mouth closed. I know it is counter intuitive but it absolutely works. By keeping your mouth closed you do not activate you sense of taste which works with your olfactory senses. You also keep the gasses frome being trapped in the roof of your mouth. This is my “non scientific” observation. I have verified it with both onions and Cajun seasoning smoke when “Blackening” meats. Keeping the mouth closed is the most effective method for keeping dry eyes when you meet an emotional onion.
