Here is one of the most useful kitchen gadgets that you can own.  Your very own butcher’s block!  Mine is over a hundred years old it measures 36″x36″x12″.  It is made of solid maple with dove-tail joints and three steel allthreads to prevent it from cracking apart.  It lives in the center of my kitchen and is the place where 90% of my home kitchen work takes place.  After looking for years I finally found it in an antique store that specialized in old furniture.  It cost me $200 (1974) and has saved my cooking life on many occasions.

I coat the top of it with a thin layer of olive oil every 6 months or so to keep it sealed and shiny. Other than that a mild soapy water solution keeps it clean.  It is big enough to cut up all the vegetables you need to cut for chunky vegetable soup, or roll out, fill and cut your favorite cinnamon dough for rolls.  Over the years (before I got it) there were a couple of places where the butcher spent a lot of time cutting in one place so a few spots are a little worn but I move around with my cutting so the surface is fairly level.  Since I am cutting on the end grain the marks and scratches from a knife do not show up.

This and similar blocks are still available today from the Kitchen Source, they seem to have a wide selection of woods you can choose from including oak, cherry and walnut.  Warning, they cost more than $200 by a lot!

My second favorite kitchen gadget was an idea that I borrowed from another chef some years ago.  It is a home made coring tool that you can make from a copper water pipe.  I know, I know you can buy an apple correr for about $4.98. But, does it core pineapple? And can you make mushrooms with it?  Here is a novel starch idea for you.  instead of those boring turned potatoes that simply have a peeled strip around the center, next time make your new potatoes into mushrooms coated in olive oil and fresh rosemary, delicious!

The picture shows the process.  Clamp a 12″ piece of copper pipe into a vise and make a series of serrations with straight and angled cuts as you go around the pipe. It takes about 8 vee cuts to make a pipe.  For mushrooms you insert it into the potatoe about three quarters of the way and then take a dull paring knife and cut in until you hit the pipe.  Cut around the pipe and loosen the doughnut that  you have just formed, then pull the resulting mushroom from the end of the pipe.  I use a 3/4″ pipe and keep a 3/4″ wooden dowel with it to push out the cores when I cut them (if I am not doing potatoes). It works great for a professional looking pineappple, and even celery root if you want to make flower petal chips.

Use new potatoes (little reds) and make three per person coat with the oil,  fresh minced rosemary, salt and pepper and bake for 45 minutes in a 350 degree oven.  I used to have a lot of fun when I served these on a buffet line.  As the guests came through the line I would ask if they wanted a potato as I pointed at the “mushrooms”, when they said, “I don’t like mushrooms” I would repeat the question, it was good for a laugh.  These make a pretty presentation to spice up a boring plate.  img109

While I seem to be on the subject of kitchen gadgets recently it occured to me that there are a few tools that I use regularly that due to modern technology are vastly improved.  The top of the list would have to be the new high temprature rubber spatula.  This $5 common item is a tremendous improvement over the spatulas yesteryear.  It was not that many years ago that in a proffesional kitchen the rubber spatula would be burned on the end.  I hesitate to mention this but the fact of the matter is that the industry as a whole fed a lot of rubber to its patrons.  Not a pleasant thought but true none the less.  So using these new high temp spatulas is a distinct improvement.

Another new favorite toy of mine is the pump up spray bottle called the “Misto”  it enables you to put what ever type of oil you like to use in cooking inside, pump it up a couple of times and then spray your pan or baking dish.  Have you ever wondered what exactly is in the can of pam or whatever spray you use for that purpose? Now I can know for certain.  In my case it is olive oil, I even cook my eggs with it.

Spring loaded tongs are a definite must.  I keep mine in the drawer next to my stove for easy access.  Held closed with a simple 1″ key ring to conserve space in the drawer.  The newer innovation in the kitchen is the “Kitchen Tweezers” 12″ long, it will help you to extract eggshell from the omelet pan or pick out a thin piece of toast that has wedged itself incorrectly in your toaster.  Great little toy and only about $8 at your local gourmet shop.

When the recipe calls for the juice of half a lemon do you want to dig through the cupboard looking for the juicer?  Why not use a reamer?  Oxo the “fat handled” company makes a rubber handled reamer that fits perfectly in the palm of your hand.  When I got mine it slipped past the particularly hard lime that I was juicing and found its way into my my hand. So i would recommend that you file the tip of the reamer just a tiny bit, the tips are sharp.

Then there is the “Offset” Bread knife, until I used one I had no idea what I had been missing.  Slicing bread or little cocktail rolls without dragging your knuckles on the bread board.  What a joy!

Finally, though not so new the most important cool kitchen gadget for my kitchen is my red Cuisinart coffee Grinder/Maker with programmable timer.  When I have to be out early as I do on most days it is absolutely awesome to climb out of bed to a cup of fresh ground, freshly brewed coffee that just finished brewing as I come down the hall.  Time to go set that up right now.

Storing Your Kitchen Knives

Wondering about the best and safest way to store your kitchen knives? This article will provide you with information on your knife storage options.

It’s important to store your knives properly for safety reason and to prevent damage and premature dulling of your the blades.

It’s not a good idea to store knives loosely in a kitchen drawer because it can be dangerous to unwary cooks and the blades can easily be nicked as they slide around with the other kitchen gadgets. If you want to store your knives in a drawer, there a couple of safe options. Knife sheaths or guards wrap around the knife blade and prevent the blade from coming into contact with other utensils or, worse yet, fingers. If you like this option, try to avoid the sleeve type sheath that opens only enough to slide the blade in. These can be very difficult to clean and can harbor dirt, germs and even moisture. The better option in knife guards is a knife safe. Knife safes are made of durable, food grade plastic and come in a number of different sizes to fit different size blades. The safe opens flat and then closes over your knife, completely covering the blade, with tabs and rubber pads that hold it in place, allowing safe storage and transportation. These work well because, since the hinge allows them to open completely, they are easy to wash. In fact, many are dishwasher safe.

Another drawer storage option is a drawer block. This is basically a thin wooden block with slots to keep the knives in place. Because drawer blocks can tend to be limited in both the number and types of knives it will hold, a drawer block is best for people who don’t plan on owning a large number of blades and for those who don’t have limited drawer space.

Another storage option for knives is a wall-mounted magnetic strip. This alternative has several advantages. The magnetic strips are sanitary and can hold a large number of knives and, as long as the magnet is strong enough to handle the weight, there’s no restrictions relative to the size and shape of the knives you can store there. However, this option is probably best for someone who has an area in their kitchen that is very low-traffic so as to avoid the strip being bumped accidentally. Along the same reasoning, it’s probably best not to use this storage method in a household where there are small children, rowdy pets or clumsy cooks. In addition, keep in mind that ceramic knives are not magnetic. So if you plan on owning ceramic blades, this storage option won’t work for you.

The most popular way to store knives is with a knife block and for good reason. Knife blocks are a safe and convenient way to store your knives and are great if you have more counter top space than drawer space. But, knife blocks are not without their problems. In particular, knife blocks can be tough to keep clean. Dirt and moisture can get stuck in the slots and can be difficult to get out. Even with this issue, I use a block to store my knives because I haven’t found a better alternative that works for me. But, I make sure that my knives are clean and dry when I put them into the block. (Really, no matter how you store them, knives should always be completely dry before putting them away.) And, I use canned air like they use to clean computer keyboards to remove dust from inside the knife slots.

Knife blocks used to be available only as a part of a knife set. But now they can be purchased alone, and are available in all shapes and sizes. Look for one that is large enough for all your knives and consider getting a block that includes a place for your kitchen shears and for your honing steel.
